Overview

The Manager at Miso Phat Sushi oversees daily operations at our Maui Coast Hotel location in Kihei, ensuring exceptional guest experiences, high-quality food, and a cohesive team environment. This role involves leadership, operational oversight, and collaboration with the family-owned business to uphold our reputation for award-winning sushi and outstanding service.

Key Responsibilities

  • Operational Oversight: Manage daily restaurant operations, including opening and closing procedures, staff scheduling, and inventory control. Ensure smooth service during peak hours, including happy hour (3–5 PM) and evening rushes.

  • Team Leadership: Supervise and motivate a team of servers, bartenders, sushi chefs, cooks, prep cooks, dishwashers, food runners, and hosts. Conduct pre-shift meetings to communicate specials, expectations, and operational updates.

  • Guest Experience: Oversee guest interactions, addressing complaints or special requests promptly to maintain high satisfaction. Ensure the aloha spirit is reflected in all guest-facing activities.

  • Financial Management: Monitor sales, labor costs, and inventory levels, working with ownership to meet financial goals. Handle cash reconciliation and oversee POS system accuracy.

  • Quality Control: Ensure all food, including nigiri, specialty rolls, and hot dishes, meets Miso Phat’s standards for freshness and presentation. Conduct regular checks on kitchen and sushi bar operations.

  • Staff Training and Development: Train new hires on restaurant standards, menu knowledge, and customer service. Provide ongoing coaching to improve team performance and foster growth opportunities.

  • Health and Safety Compliance: Enforce strict adherence to health, safety, and sanitation regulations, including food handling, alcohol service, and workplace safety. Conduct regular inspections of front- and back-of-house areas.

  • Inventory and Vendor Coordination: Manage inventory of fish, produce, beverages, and supplies, coordinating with vendors to ensure timely deliveries and quality. Work with owner Shawn Steadman to incorporate fresh fish from Shiso Phat when available.

  • Marketing and Events: Collaborate with ownership to promote the restaurant through social media, local partnerships, and events at the Maui Coast Hotel. Support initiatives like happy hour specials and seasonal menu updates.

  • Conflict Resolution: Address staff or guest conflicts professionally, maintaining a positive and productive work environment.

Qualifications

  • Experience: 3–5 years of restaurant management experience, preferably in a high-volume sushi or Japanese restaurant. Experience in a resort or hotel dining setting is a plus.

  • Skills: Strong leadership, organizational, and problem-solving skills. Proficiency with POS systems, inventory management software, and basic financial reporting. Excellent communication and customer service skills.

  • Physical Requirements: Ability to stand for long periods, lift up to 50 lbs., and navigate a busy restaurant environment.

  • Certifications: Food handler’s certification and Hawaii liquor server certification (e.g., ServSafe, ServSafe Alcohol) required.

  • Availability: Flexible schedule, including evenings, weekends, and holidays, with on-call availability for emergencies.

  • Preferred: Knowledge of Japanese cuisine, familiarity with Maui’s hospitality industry, and experience with family-owned businesses.

Compensation

  • Salary: $50,000–$65,000 annually + performance-based bonuses.
