Overview

Prep Cooks at Miso Phat Sushi support the kitchen and sushi bar by preparing ingredients, ensuring the freshest components are ready for sushi chefs and cooks. This role is critical to maintaining efficiency in our Kihei location at the Maui Coast Hotel.

Key Responsibilities

  • Ingredient Preparation: Chop vegetables, prepare sauces (e.g., unagi sauce, soy-based dips), and portion ingredients like rice, crab mix, and garnishes (tobiko, sesame seeds).
  • Fish Processing: Assist sushi chefs with basic fish preparation, such as cleaning and filleting, under strict food safety guidelines.
  • Stock Management: Organize and rotate inventory in coolers and dry storage, ensuring fresh ingredients are prioritized. Label and date all prepped items.
  • Workstation Maintenance: Keep prep areas clean, sanitized, and organized, following health and safety regulations.
  • Support Tasks: Assist with receiving deliveries, checking ingredient quality, and reporting inventory needs to management.
  • Team Collaboration: Work closely with cooks and sushi chefs to ensure a steady supply of prepped ingredients during service.

Qualifications

  • Experience: Prior prep cook experience preferred but not required. On-the-job training provided.
  • Skills: Basic knife skills, attention to detail, and ability to follow recipes and instructions.
  • Physical Requirements: Ability to stand for long periods, lift up to 40 lbs., and work in a refrigerated environment.
  • Certifications: Food handler’s certification preferred.
  • Availability: Flexible schedule, including evenings, weekends, and holidays.
  • Preferred: Interest in learning sushi preparation techniques.
