Sushi Chefs at Miso Phat Sushi are skilled artisans responsible for crafting high-quality nigiri, sashimi, specialty rolls, and temaki hand rolls using the freshest fish sourced daily. Working at the Maui Coast Hotel location, sushi chefs contribute to our reputation for award-winning sushi.

Key Responsibilities

  • Sushi Preparation: Prepare nigiri, sashimi, and specialty rolls (e.g., Spicy Tuna with Broiled Unagi, California Roll with Tuna and Yellowtail) with precision and artistry. Ensure consistency in portioning, presentation, and flavor.
  • Fish Handling: Inspect and handle fresh fish, including ahi, salmon, and yellowtail, following strict food safety and quality standards.
  • Menu Development: Collaborate with the head chef to create daily specials and seasonal rolls, incorporating local ingredients.
  • Workstation Management: Maintain a clean, organized, and sanitary sushi bar, including knives, cutting boards, and display areas. Adhere to health and safety regulations.
  • Guest Interaction: Engage with guests seated at the sushi bar, explaining preparation techniques and answering questions about menu items.
  • Inventory Control: Monitor fish and ingredient inventory, reporting needs to management to ensure freshness and availability.
  • Team Collaboration: Coordinate with prep cooks and kitchen staff to ensure timely preparation of ingredients and garnishes.

Qualifications

  • Experience: 3+ years of experience as a sushi chef in a high-volume restaurant, with expertise in Japanese cuisine and sushi preparation.
  • Skills: Advanced knife skills, knowledge of fish sourcing and preparation, and ability to work efficiently under pressure. Creativity in roll design is a plus.
  • Physical Requirements: Ability to stand for long periods, handle raw fish, and perform precise cutting tasks.
  • Certifications: Food handler’s certification required (e.g., ServSafe).
  • Availability: Flexible schedule, including evenings, weekends, and holidays.
  • Preferred: Passion for Maui’s local seafood and familiarity with Japanese culinary traditions.
